Scrumptious Easter Cupcakes

I used to work as an au-pair. My first memory of typical British Chocolate is the time my au-pair kids tricked me into believing Cadbury’s Mini Eggs are real bird’s eggs.


Nowadays I prefer to bake with them rather than worrying how to get them back into the nest without the mother noticing. For this sunny (ish) Easter Weekend I decided to make some scrumptious Easter Cupcakes.


The recipe is a spin-off of Mary Berry’s Easy Vanilla Cupcakes:

175g unsalted butter
3 eggs
100ml milk
230g caster sugar
250g self-raising flour
1 teaspoon vanilla extract

bake 25 min, 180 degrees

75g unsalted butter
400g icing sugar (add bit by bit)
1 teaspoon vanilla extract
4 tablespoons milk
food colouring & cocoa power (optional)
sprinkles, Mini Eggs, etc. for decoration

Baking is good in every way. It helps me calm down and focus after a stressful day at work plus baked goods are probably my favourite gift to give to someone I love 🙂 I think when it gets to the decorating bit, I sometimes get so lost in the detail and focus just that little bit too much. ‘What it’s been 5 hours?’


It didn’t quite take me 5 hours this time – then again, that was probably because I was filming. The way they turned out made me really happy and definitely brought some spring feelings into our kitchen. Yum!
